As it is customary to provide appetizers when entertaining, your guests will truly enjoy our blended soft cheeses that can be placed on a platter and surrounded by baguette slices or vegetables for an appetizer that will complement the accompanied wine or microbrew. For recipes that call for the use of cream cheese, we encourage you to try our plain flavor cheese to give your creation a richer flavor. Our cheese also works well in the following combinations: beef with chipotle, baked potato with garlic & herb, fish with lemon-herb, lamb with rosemary-peppercorn and for dessert, a cheesecake made with plain.

Lemon Dill – Great as a dip for fresh veggies for a light lunch or dinner. The Wild Pear Restaurant in Salem uses the Lemon Dill on their Halibut and bakes it. The Lemon Dill is a popular choice to put on Salmon for summer barbeques. This cheese pairs well with a peach beer or white wine.

Garlic Herb – A general favorite, it’s delicious on sourdough bread and crackers as well as to dip fresh veggies in. A delightful substitute for ricotta cheese in lasagna, Garlic Herb holds its form well when baked due to its low fat content and doesn’t run when heated.

Plain Chevre – Our award-winning Plain Chevre has countless uses. It is good turned upside down with a Jalapeño jelly on top and cut into with crackers or any preserve like blueberry, apricot, Marion berry and spread on a bagel. Try topping it with a shrimp cocktail or use with bruschetta. It’s a healthy, low fat substitute for cream cheese when making cheesecakes and won’t sit as heavy in your stomach. The Silver Grille in Silverton uses our Plain in several ways, so do the following Salem, Oregon restaurants: Bon Appetit, Morton's, Illahe Hills and Bentley's Grill.

Rosemary & Peppercorn with Olive Oil – Another strong favorite, this cheese is perfect with steak and baked potatoes with a red wine. Try spreading it on your potato or French bread. This also goes well with lamb and wild game.

Chipotle – If you like spicy, this cheese is excellent with corn chips or in a seven layer dip with tomatoes and sour cream. For a southwestern style, put it in your scrambled eggs. It is also good on tart apples or pears with a fruity wine or smoked beer. Restaurants have used the Chipotle in their fish tacos.
